Keto Asparagus, Ham, and Manchego

Keto Asparagus, Ham, and Manchego – a unique recipe combination, and so delicious! It is also a quick and fool-proof recipe. Three spears of asparagus in the wrap will contain only 1g of carbs! We call it the perfect “Spanish Tapas” (side dish) for your next favorite meal. If you love roasted vegetables then put this one in your recipe collection!

Ingredients

The key to our recipe is to make sure you only use top quality ingredients. Start with a top-of-the-line thinly sliced ham. We love Serrano Ham for this recipe. After all, it is a Spanish dish and Serrano Ham is the best Spain has to offer. It can be readily found in most better grocery stores. You can also order it directly at the bottom of this post. A substitute for Serrano would be a quality Prosciutto. Both a thinly cured meats that will wrap well and taste delicious.

Finally, a creamy Spanish Manchego cheese is essential. Made in the La Mancha region of Spain from the milk of the Manchega sheep, it is firm like swiss cheese and has a buttery texture. You may even find small uneven air pockets in the cheese, like swiss. It has a distinctive flavor, but not too strong. Some say it has a hazelnut sweetness. It is also readily available in most grocery stores, or on-line. We have a link below and at the end of this post, as well as in the ingredient section of our recipe.

Real Spanish Manchego cheese is so versatile, we often cut it into cubes for a special cheese plate. The taste is perfect with our Albondigas in Spanish Red Sauce recipe. We use Manchego as a creamy sauce for topping Brussels Sprouts. Try Manchego in place of Swiss cheese in any recipe – you will be delighted.

Preparation Tips

The process is simple – coat the asparagus with extra-virgin olive oil, wrap with the Serrano Ham, roast until slightly tender, coat with grated Manchego cheese and melt in your hot oven. Easy-peasy and as we said before, fool-proof!

We do suggest using only one slice of the ham for wrapping the asparagus. It will crisp up as it roasts and the flavor of the ham will increase. Both the ham and the cheese are salty (especially the Serrano Ham) so there is no need to add salt to the recipe. Although, we do like some grated black pepper on top for a peppery taste blend.

The Manchego should melt easily in your hot oven and it is the last step in the process. You can switch to the broiler setting for the last 2 minutes to make the Manchego cheese bubble and brown. You do not want an overcooked asparagus spear and this tip helps since it cuts the cooking time. We also like to top with some fresh grated Manchego when plating – it adds the same flavor with a different texture and presentation.

Ingredients

Instructions

  • Preheat oven to 425 degrees. Cover a large baking pan with parchment paper.
  • Place the trimmed asparagus in a bowl, coat with olive oil and sprinkled black pepper. Toss to coat thoroughly.
  • Wrap three asparagus spears with one slice of Serrano ham.
  • Place the wrapped spears on the baking pan. Make sure they are separated from each other. 
  • Bake for 10 minutes in the oven. Top with grated Manchego and return to the oven for an additional 5 minutes. If not melted well, you can turn your oven to broil for the last 2 minutes.
  • Garnish with uncooked Manchego and serve hot as an appetizer or side dish.
