Keto BLT Chaffle with Avocado – a unique take on the classic BLT sandwich that we have all enjoyed on traditional bread. A perfect choice for the hottest trend in low carb – the “Chaffle.” A Chaffle is so versatile and so easy . . . and so low in carbs! Chaffles have definitely become a viral explosion on the Internet. They are everywhere!

We recently spent a month visiting family and friends in Pittsburgh. The trip took us away from the Southwestern heat and took Joanie away from her kitchen and our blog posts. The break was much needed. While we enjoyed our vacation, we did not count on the explosion of the Chaffle. It literally occurred overnight in early August. Now, Chaffle Makers are flying off the shelves and the low carb world has gone crazy with recipes.

Ingredients

Let’s start with the Chaffle. It is simply a waffle that is made from only egg and cheese. Just two ingredients are called for in the base Chaffle. The choice of cheese seems to be either Mozzarella or Cheddar. It is nice to have only two simple ingredients, but it has to taste great. The basic recipe does tend to be a bit “eggy” in taste. Joanie wanted to obtain a more crunchy Chaffle, without any scrambled egg-like inside. She also wanted a more traditional fluffy waffle texture. Like many bloggers, she began experimenting.

Joanie found that a tablespoon of almond flour and a quarter-teaspoon of baking powder helped to achieve a Chaffle that tastes more like a waffle. Try her version for a delicious savory Chaffle. As we move forward with different Chaffle recipes, we expect adding other ingredients to the batter will be the norm. Certainly sweeter recipes will call for sweeteners, cinnamon. and vanilla. But, we think we have the base Chaffle recipe down!

We are starting with a breakfast recipe for our savory Chaffle. However, we anticipate many unique recipes in the future as the Chaffle craze is growing. One blogger has already released an e-book with 50 Chaffle recipes – amazing what some do in one month. We will continue to post recipes with our Tasty Low Carb touch – Joanie is already testing ingredients and creating various Chaffle recipes in our kitchen.

Our first entry in the Chaffle world is our Keto BLT Chaffle with Avocado. Think of how many breakfasts you have enjoyed that included waffles and how many BLT sandwiches you have eaten for lunch. Let’s combine them for a delicious BLT breakfast/brunch Chaffle Sandwich. Adding fresh avocado will make this a definite “Low Carb Chaffle Classic!”

Preparation Tips

First, and foremost, to make a Chaffle you need a waffle maker. We found that the easiest solution is a Dash Mini Waffle Maker. They are only $9.99 from Amazon. They make one 4-inch round Chaffle that is perfect for sandwich creations. The Dash Mini only weighs one pound, takes up very little room, and comes in many colors. We bought the red to match our other kitchen appliances. They produce a perfect Chaffle every time – we found that 3 1/2 minutes is all that is needed to produce the best Chaffle.

Chaffle making tips are also everywhere on the Internet. Here are ours:

  • Use freshly grated cheese (not bagged versions)
  • Make sure your Chaffle maker is hot before starting
  • Do not peak at the Chaffle while cooking – experiment with the timing until you get the perfect result – then stick with that time – for perfect Chaffles, a timer is necessary
  • Allow the Chaffle to cool on a cooling rack for a couple minutes – they will crisp up nicely on the outside and remain soft on the inside
  • They will freeze well and can be toasted or reheated in a non-stick fry pan

For the BLT with avocado, we like crispy bacon! Choose your favorite preparation method. Some prefer cooking in the oven on a baking rack to drain excess fat. Some prefer a skillet and then allowing the bacon to crisp while draining the excess fat on paper towels. Just make sure you use a lot of bacon! We like Bibb lettuce – it provides nutrition and a nice presentation. Finally, make sure you use a delicious fresh tomato slice and top with freshly sliced avocado. A creamy guacamole as a topping instead of fresh avocado would also be wonderful.

Ingredients

  • Chaffle
  • 1 1 Egg beaten

  • 1/2 cup 57 g Cheddar cheese grated

  • 1 tablespoon 1 tablespoon Almond flour blanched

  • 1/4 teaspoon 1/4 teaspoon Baking powder

  • BLT with Avocado
  • 3 strips 3 strips Bacon cooked

  • 1 piece 1 piece Bibb lettuce

  • 1 slice 1 slice Tomato fresh

  • 1/4 1/4 Avocado thinly sliced

Instructions

  • Chaffle
  • Spray mini-waffle maker with cooking spray then preheat until ready.
  • In a small bowl, combine all of the chaffle ingredients. You can also mix in a blender.
  • Pour enough batter into the center of the waffle maker and spread to fill the edges. If you overfill the first one use less each time so you avoid spill over. Close the lid and allow to cook for 3 1/2 minutes.
  • Remove the chaffle and allow to cool on a cooling rack – repeat the process for the second chaffle.
  • BLT with Avocado
  • Add a piece of bibb lettuce, a tomato slice, and strips of bacon on a chaffle and top with the sliced avocado and second chaffle. (For a "Dagwood" repeat the process of lettuce, tomato, and bacon before topping with the avocado) If you prefer, a creamy guacamole instead of the avocado would be delicious.
  • Plate and enjoy.

  1. This looks delicious. I don’t know if you knew it, but this photo is in the book Keto Chaffle Recipes Cookbook (https://smile.amazon.com/gp/product/B08LH83XX7). I looked inside the book online to see if it would be worth the cost. Many of the recipes seemed to be copied from the internet (although strangely reworded to seem like they were written by a bot at times) so I searched for matching ones and yours came up here. They’ve flipped the image but it’s identical, even your striped plate is right there. It’s accompanying their recipe for “Cheesy Chaffle Sandwich’s With Avocado and Bacon” (their misspelling on sandwiches, not mine, LOL). I don’t know if you gave permission for it to be used but I thought I’d give you a heads up.

      Thank you Alicia! Unfortunately, this does happen. We work very hard on our recipes, testing them, taking the photos, and completing our narratives. It is a shame when someone steals your work and profits by it. I did report them to Amazon for theft of copyrighted material and also reported it to their readers in a comment.
