Keto Chaffle with Chicken – Amish Style is a family take on the classic “Chicken with Waffles.” As the Chaffle has taken the low carb world by storm, bloggers are creating and re-creating classic recipes using Chaffles – the new low carb darling! Joanie is no exception. Since returning from vacation, we have been eating a lot of Chaffles – she is busy experimenting in the kitchen. This recipe was my suggestion. My Mother was of Pennsylvania Dutch heritage and I remember her making this waffle dish. It is traditional in the Pennsylvania Amish country.

So many chicken with waffle recipes (especially from the Southern United States) call for fried chicken on a wheat-based waffle, with drizzled maple syrup – so delicious and so high in carbs. With the advent of the low carb Chaffle, and by using pulled roasted chicken to eliminate the bread crumbs, and by adding a delicious low carb gravy, Joanie made this Keto Chaffle with Chicken – Amish Style low carb! The gravy is light, the chicken is moist, and the result is likely the best waffled chicken you have ever tasted!


Ingredients
We have previously posted our Chaffle recipe in our Keto Chaffle BLT with Avocado post. Joanie likes the cheesy taste using cheddar cheese, and her recipe incorporates some Almond Flour and Baking Powder to provide a real waffle-like texture.

First, and foremost, to make a Chaffle you need a waffle maker. We found that the easiest solution is a Dash Mini Waffle Maker. They are only $9.99 from Amazon. They make one 4-inch round Chaffle that is perfect for sandwich creations. The Dash Mini only weighs one pound, takes up very little room, and comes in many colors. We bought the red to match our other kitchen appliances. They produce a perfect Chaffle every time – we found that 3 1/2 minutes is all that is needed to produce the best Chaffle.


Once you get into the “Chaffle Explosion” and taste how delicious a Chaffle can be, you will likely want to make more and more! We have put this 4 “Chaffle” maker machine on our wish list – it receives great reviews and it has a “No Drip” feature. The almond flour will also be used in the gravy base with chicken stock. Joanie uses shredded chicken breast for the recipe (just like my Mother). You can either boil chicken breasts or use a rotisserie chicken for shredding. For this recipe you need not shred the chicken too finely. The pictures will give you the right idea. Many will add peas and some carrots to the gravy – almost like a Chicken Pot Pie. However, Joanie added some sliced green onion for presentation.

Preparation Tips
Chaffle preparation tips are everywhere on the Internet. Here are our tips:
- Use freshly grated cheese (not bagged versions)
- Make sure your Chaffle maker is hot before starting
- Do not peak at the Chaffle while cooking – experiment with the timing until you get the perfect result – then stick with that time – for perfect Chaffles a timer is a good idea (we used our iPhone clock timer)
- Allow the Chaffle to cool on a cooling rack for a couple minutes – they will crisp up nicely
- They will freeze well and can be toasted or reheated in a non-stick fry pan



Chaffles will freeze well. We usually make a larger batch and refrigerate for use during the week and freeze any extras. They should be thawed in the refrigerator and can easily be re-heated in a small skillet or toasted. We like using a skillet on low-heat, as this will crisp them before topping with the chicken and gravy mixture. Toasting will also heat the Chaffle before topping. Chaffles do not crisp well in the microwave.

One quick tip on the chicken for this recipe -> we used rotisserie chicken breast and we actually simply poured the gravy over the chicken topped Chaffle. You can also heat the already cooked chicken pieces in the gravy itself. That is a great tip for reheating. Either way, the taste will be delicious and you will enjoy the “Amish Style” recipe.
