Ingredients
Joanie started with her basic Chaffle recipe. However, she used Mozzarella cheese instead of cheddar. The Mozzarella taste is not as pronounced so it will not overshadow the chocolate flavor. Since this is a dessert Chaffle, sweetness is needed for a classic dessert flavor. Vanilla extract is virtually a must in any dessert recipe and Joanie likes to bake with Erythritol. Unsweetened Cocoa is the source for the Chocolate flavor and for a double-chocolate effect Joanie sprinkled Lily’s Unsweetened Chocolate Chips directly in the batter before closing the lid on her Chaffle Maker.

- Allow the Chaffle to cool on a cooling rack – they will crisp up yet remain soft on the inside
Joanie has two tips for making her recipe. First, make sure that you add the chocolate chips to the batter after you spoon it into the Mini-Chaffle Maker. You will then get a bite of chocolate chip that is less than totally melted. Yum in every bite. Secondly, use a cooling rack so that the Chaffles will firm up before using. They can also be refrigerated for a week and even frozen for use later. Unlike most left-over Chaffles that need to be toasted to heat up, these warm nicely in the microwave (15 seconds).
