This batter can also be used to make Chocolate pancakes. Children will love those! And, you can use the recipe and make a delicious batch of chocolate brownies. Simply adjust the servings number on the recipe below and the ingredients will increase proportionately. You can make mini-brownies in mini-muffin tins or ramekins, as well. Joanie started with her basic Chaffle recipe. However, she used Mozzarella cheese instead of cheddar. The Mozzarella taste is not as pronounced so it will not overshadow the chocolate flavor. Since this is a dessert Chaffle, sweetness is needed for a classic dessert flavor. Vanilla extract is virtually a must in any dessert recipe and Joanie likes to bake with Erythritol. Unsweetened Cocoa is the source for the Chocolate flavor and for a double-chocolate effect Joanie sprinkled Lily’s Unsweetened Chocolate Chips directly in the batter before closing the lid on her Chaffle Maker.

Preparation Tips

First, and foremost, to make a Chaffle you need a waffle maker. We found that the easiest solution is a Dash Mini Waffle Maker. They are only $9.99 from Amazon. They make one 4-inch round Chaffle that is perfect most recipes. The Dash Mini only weighs one pound, and comes in many colors. We bought the red to match our other kitchen appliances. We found that 3 1/2 minutes is all that is needed to produce the best Chaffle. Here are some tips:

  • Use freshly grated cheese (not bagged versions)
  • Make sure your Chaffle maker is hot before starting
  • Do not peak at the Chaffle while cooking – for perfect Chaffles, a timer is necessary
  • Allow the Chaffle to cool on a cooling rack – they will crisp up yet remain soft on the inside

Joanie has two tips for making her recipe. First, make sure that you add the chocolate chips to the batter after you spoon it into the Mini-Chaffle Maker. You will then get a bite of chocolate chip that is less than totally melted. Yum in every bite. Secondly, use a cooling rack so that the Chaffles will firm up before using. They can also be refrigerated for a week and even frozen for use later. Unlike most left-over Chaffles that need to be toasted to heat up, these warm nicely in the microwave (15 seconds). As a result, you will have that hot brownie taste. Topped with cool whipped cream – well, yum!

  • Keto Chocolate Brownie Chaffles
  • 1 1 Egg beaten

  • 1/2 cup 56 g Mozzarella cheese grated

  • 1 tablespoon 1 tablespoon Almond flour blanched

  • 1/4 teaspoon 1/4 teaspoon Baking powder

  • 1/4 teaspoon 1/4 teaspoon Vanilla extract

  • 1 tablespoon 1 tablespoon Cocoa unsweetened

  • 1 tablespoon 1 tablespoon Erythritol

  • 2 teaspoons 2 teaspoons Heavy cream

  • 16 16 Chocolate chips unsweetened


  • Keto Chocolate Brownie Chaffles
  • Preheat mini-chaffle maker.
  • In a medium bowl add all ingredients except the chocolate chips and hand mix with a whisk or fork.
  • Pour a heaping tablespoon in your chaffle maker and sprinkle half the chocolate chips on top. Cook for 3 1/2 minutes.
  • Cool on a cooling rack, then serve with whipping cream, more chocolate chips, or even a strawberry.

  • Top with whipped topping, chocolate chips, cocoa powder, or even fresh strawberries. Adjust the sweetener to your taste.
