Keto Italian Sausage Soup

Keto Italian Sausage Soup mirrors a traditional Tuscan bean Soup, just without the beans! This recipe is one we like to call a real “belly warmer.” It is delicious! Joanie’s soup creation can serve as the perfect introduction to a low-carb Mediterranean diet. It has traditional vegetables like carrots, mushrooms, and onions, all topped with delicious wilted spinach. Yet, you can transition to these dietary changes with the pronounced flavor of Italian sausage. This recipe has it all – mostly unforgettable taste!

Ingredients

As noted, Keto Italian Sausage Soup uses regular Italian sweet sausage as the protein. For this creation Joanie likes using “Mild Sage Sausage.” The addition of red pepper flakes and lots of garlic will give the soup a distinct flavorful kick. The onions, carrots, and mushrooms add more flavor and a few carbs, but in a good way. The soup is very hearty. Joanie likes this blend of vegetables with the sausage taste.

Joanie’s Zuppa Toscana Soup uses Parmesan as the cheese of choice. But, for this recipe she likes Pecorino Romano. It offers a less nutty flavor. The sheep’s milk Pecorino cheese is a bit saltier than Parmesan, this enhances the flavor even more. It is a stronger cheese and a bit spicier. It just goes perfectly with this recipe. You could substitute Parmesan, but Pecorino Romano is easy to find and so good!

Preparation Tips

Our first tip is to make sure you have a good Dutch Oven for this, and any soup recipe. They are so versatile for braising and oven baking, but they are also perfect soup pots. We have linked here to our favorite. It is a 6.75 Qt. Le Creuset. The nice part of the Le Creuset is that it is wider and lower than most round Dutch Ovens, It heats quickly and thoroughly. If you do not own one, it is a great choice.

Make sure that you drain off the grease from the sausage before cooking the vegetables. Do not overcook the vegetables, they will continue to soften once you add the chicken stock. The Xanthan Gum will add a bit of thickness and do remove the soup from the heat before adding the spinach. It may seem like a lot of spinach, but the heat from the soup will wilt it fast and it will shrink. Add that Pecorino Romano before serving, hot.

Ingredients

  • 1 tbsp 1 tbsp Olive oil (extra virgin)

  • 1 pound 450 g Italian pork sausage

  • 1 cup 160 g Onions (chopped)

  • 6 cloves 6 cloves Garlic (sliced)

  • 1/2 cup 64 g Carrots

  • 1 tsp 1 tsp Sea salt

  • 1 tsp 1 tsp Pepper

  • 1/2 cup 48 g Mushrooms (sliced)

  • 1/2 tsp 1/2 tsp Red pepper flakes

  • 32 ounces 32 ounces Chicken stock

  • 1/2 cup 50 g Pecorino Romano cheese (grated)

  • 1/2 tsp 1/2 tsp Xanthan Gum

  • 3/4 pound 340 g Spinach leaves

  • 1 drizzle 1 drizzle Olive Oil (extra virgin)

Instructions

  • In a Dutch Oven, over medium heat, add the olive oil and sauté the sausage until browned (5 minutes). Drain the grease.
  • Add the onions, garlic, carrots, mushrooms, red pepper flakes, salt, and pepper and cook for 5 minutes. Stir to incorporate.
  • Pour in chicken stock and simmer for 15 minutes. Stir in 1/4 cup of the Pecorino Romano cheese for the last 5 minutes,
  • Stir in the Xanthan Gum and then the spinach leaves and let the soup rest for 5 minutes off the burner.
  • Serve hot sprinkled with the remaining Pecorino Romano cheese over each bowl.

Chef’s Notes

  • The recipe is an adaptation from my original recipe for Italian Sausage soup with beans. To use the beans, add three 10 ounce cans and eliminate the Xanthan Gum. Lots of Carbs, but the same delicious taste. Perfect for your Mediterranean diet recipe box!
  • Any mild Italian Sweet Sausage will be fine in the recipe. For a kick, I like to use “Sage Sausage.” It is the same sausage I use for Thanksgiving stuffing.
