Keto Raspberry Coconut Rum Cooler

Keto Raspberry Coconut Rum Cooler is our twist on the classic “Rum Cooler.” Our cooler is a sweet, fruity, bubbly tropical cocktail with zero carbs. A traditional “Rum Cooler” version is simpler. Light rum, simple syrup, and ginger ale in a Collins glass. That was the 1970s recipe. We give our version a more Caribbean feel adding raspberry and coconut flavors. You will love this creation!

You may also want to try a few of our other rum drinks. Some have both light and dark rum, and some just the lighter (less aged) version.

Low Carb Raspberry Coconut Rum Cooler Ingredients

Our first step to mastering the perfect Low Carb Rum Cooler was to recognize that you need great rum! We like a mixture of light and dark rum for this recipe. Light rum is fermented in steel casks and has a sweeter flavor than dark or amber rum. Dark rums are fermented in oak barrels and that produces the darker caramel color and a much deeper flavor.

Puerto Rican rum is famous, but many believe the best dark rums come from Barbados. We agree and like to use Kaniché XO. The rum is aged for 11 years and begins its journey in oak bourbon casks in Barbados. It is then shipped to France to age in cognac casks, bottled, and exported throughout the world. It is delicious and has a smooth aroma. The best part is it is not at all expensive. For around $30 for a bottle you will have a wonderful flavor for your “Rum Cooler.”

Torani Sugar-free Syrups

We often use water enhancers for many of our tropical drinks. They will not add any carbs per drink, and they work great. They do usually require adding water to each drink, since they are enhancers. However, the Torani sugar-free syrups also add that color and the enhanced taste is more pronounced. They work so well for quick and easy tropical drinks. We have been using them more and more often.

The Torani Coconut Sugar-free Syrup is one of our favorites. If you mix Coconut sugar-free syrup with a light rum you have basically created the taste of Malibu Rum, without the carbs. We also use our the Torani Raspberry Sugar-free Syrup in a lot of our drinks (see our Keto Raspberry Gimlet Cocktail). You can also get a handy four-pack of Torani Sugar-free Syrups containing Strawberry, Raspberry, Coconut, and Peach. Get all four tasty syrups and use them to make many of our other cocktail. Preparation Tips

Preparation is simple for this delicious cocktail. No blending and no fuss. All you need is a cocktail shaker, and lots of ice. We do suggest strongly keeping your cocktail glasses cold in the fridge or chilling the glasses by filling them with ice while you mix the cocktail.

We also suggest filling 3/4 of your shaker with ice before adding the rum and other ingredients. There is no need to use a strainer after shaking. However, we do use a strainer to make sure each glass contains half of the mix (we always make two). Then we divide the ice in the shaker evenly and top off with approximately 5 ounces of diet lemon-lime soda (Sprite).

Instructions

  • Fill two small cocktail glasses with ice and let chill for 5 minutes.
  • Pour the rums and Torani sugar-free syrups in a cocktail shaker and fill 3/4 full with ice. Shake vigorously.
  • Discard the ice in the glasses. Pour half the mixed drink into each glass, with ice. Top with the lemon-lime soda and serve cold. You can garnish with fresh raspberries or toasted coconut.

  • Add a few raspberries to your drink for a garnish. You could also coat the rim of the glass in toasted coconut flakes. For a twist, try using Diet Ginger Beer in place of the Sprite.
