Our Keto Shredded Chicken Lettuce Wrap can be either a perfect side salad or a delicious wrap. We make this often. In fact, shredded chicken is something we always have on hand for wraps, Mexican plates, and salads. It will pair well with any vegetables, Keto taco shells, or in Cobb salads. It eliminates carbs, adds a lot of protein, and can be used for any type of cuisine.

The best part of our Shredded Chicken Lettuce Wrap – it is as easy to make as it is flexible. We had friends over last night for a casual evening. The weather was ideal. A meatball casserole was our quick meal choice. We will post our version shortly, but any get-together takes extra effort. The only cooking involved is the shredded chicken. Other than that basic ingredient, the rest is a simple salad. You can use whatever additional ingredients you have on hand. We like Bibb Lettuce, tomato, onion, and cheddar cheese. Nothing unusual – all easily obtainable – and a combination that simply tastes great together. Our special ingredient is avocado. It makes the recipe “Keto.” It also adds that creamy texture that goes so well in any salad.

Preparation Tips

Whether you wrap it for a hand-held taco substitute or eat this special recipe as a simple salad, it will be delicious. Once you have the chicken cooked and shredded it is simply presentation. Joanie likes to use “Bibb Lettuce.” It provides larger leaves, a soft texture, beautiful plate presence, and it tastes great as a bed for your chicken.

You can shred rotisserie chicken or any grilled version. However, Joanie likes to use boiled chicken breasts. This poaching technique produces a softer more versatile chicken. Without the seasonings used in cooking on the grill or a tougher skin from roasting, you can add taste with your choice of spices and vegetables. The technique is simple, cover with water, cook on a low simmer for 15 minutes. After cooling, shred with two forks.

Assembly is all that is required once your chicken has cooled. Start with a bed of Bibb Lettuce. The shredded chicken can be combined in a bowl with the other salad ingredients. Cherry tomatoes, chopped green onion, and cheddar cheese are necessities. We also love the flavor of avocado. Joanie dices the avocado before folding into the mixture. She then squeezes fresh lime juice over the entire mixture. This not only preserves the color of he avocado, it also serves as a simple lime juice dressing. Topping with a few dashes of Cholula Hot Sauce is a perfect touch!

A delicious Keto Shredded Chicken Lettuce Wrap – tasty and so simple! Only 1g of net carbs!

  • 2 2 Chicken breasts shredded

  • 1 cup 149 g Cherry tomatoes halved

  • 1 1 Green onion sliced

  • 1/2 cup 57 g Cheddar cheese grated

  • 1/2 teaspoon 1/2 teaspoon Sea salt

  • 1/2 teaspoon 1/2 teaspoon Pepper

  • 1 1 Avocado diced

  • 2 teaspoons 2 teaspoons Lime juice

  • 12 leaves 12 leaves Butterhead lettuce Bibb or Boston

  • Hot sauce Cholula


  • In a medium pot heat sufficient water to cover two chicken breasts – simmer for 15 minutes until the chicken is cooked. Remove and allow to cool.
  • Shred the cooled chicken using two forks – pulling apart creating a pile of shredded chicken.
  • In a medium bowl combine the chicken, cherry tomatoes, green onions, cheddar cheese, sea salt, and pepper. Add the diced avocado and coat the mixture with the lime juice.
  • Use one Bibb lettuce leaf as a base for the wrap and fill with the shredded chicken mixture. Garnish with some fresh shredded cheddar and a few drops of hot sauce. Serve cold.

  • You can also use a low-carb ranch dressing once plated.
