Keto Shredded Chicken Lettuce Wrap

  • 2 Chicken breasts shredded
  • 1 cup Cherry tomatoes halved
  • 1 Green onion sliced
  • 1/2 cup Cheddar cheese grated
  • 1/2 teaspoon Sea salt
  • 1/2 teaspoon Pepper
  • 1 Avocado diced
  • 2 teaspoons Lime juice
  • 12 leaves Butterhead lettuce Bibb or Boston
  • Hot sauce Cholula


  • In a medium pot heat sufficient water to cover two chicken breasts - simmer for 15 minutes until the chicken is cooked. Remove and allow to cool.
  • Shred the cooled chicken using two forks - pulling apart creating a pile of shredded chicken.
  • In a medium bowl combine the chicken, cherry tomatoes, green onions, cheddar cheese, sea salt, and pepper. Add the diced avocado and coat the mixture with the lime juice.
  • Use one Bibb lettuce leaf as a base for the wrap and fill with the shredded chicken mixture. Garnish with some fresh shredded cheddar and a few drops of hot sauce. Serve cold.


You can also use a low-carb ranch dressing once plated.
