Combine all of the ingredients (except the whipped cream and cinnamon) in a bowl to incorporate.
Pour half of the mixture (about 1 1/2 tablespoons) into the waffle maker and cook for 3 1/2 minutes.
Repeat and allow chaffles to cool for 5 minutes on a cooling rack.
Stack the two chaffles and top with whipped cream, some chopped pecans, and a sprinkle of cinnamon.
Chef's Notes
For a more decadent dessert you can also use an easy cream cheese frosting in between the Chaffles. Try 2 tablespoons softened cream cheese with 1/4 teaspoon of vanilla extract, and 2 teaspoons of Sukrin Melis.
